My Friend Nellie always made the best cold
slaw around and she shared her recipe with me
one summer and it's the only kind I make now.

Style Red Cabbage
Speaking of Easter ham, this cabbage recipe
is also a family favorite that Mom used to
make with her ham and she also made it every
Sunday dinner for as long as I can remember.
It is mouth watering, delicious and
compliments ham very well because of it's
sweet and sour taste. Every one that
tries it, rants and raves about it.
Singer, songwriter and good friend David Reed
has said it is his very favorite! My
friend Pastor George Keppley won't let me come
to dinner with out it!
Monterey
Jack Scalloped Potatoes
These Yummy potatoes are pure comfort food.
My son Bill and daughter Melissa fight over
who gets to take the leftover's home!
They just melt in your mouth and they go so
good with Easter ham. It is a dish that
is really not hard to make only time consuming
but worth it. We love them!
Twice
Baked Cheese Potatoes
This is a recipe that goes well with steaks
or chops and most anything. It is a good
one for when company comes because it is so
easy to fix. I like to grill out side
especially in the summer and these potatoes go
well with whatever you put on the grill just
add a salad and you've got dinner!
Broccoli
Salad
This is a nice Broccoli salad that would
compliment most any meat dish. When I
grill steaks out side and fix those yummy
twice baked potatoes, this salad goes very
well with them. It is another "so
easy" meal and plenty good for you, too!

Potato Salad
German Potato Salad just isn't original
unless you use German Pickles. I get
mine from the commissary on Aberdeen Proving
Ground Military base. They are imported
from Germany and are called Gundelsheim
Schwabentopf pickles. Food Lion and
Martins groceries stores also carries them in
their delicatessen section. This
wonderful potato salad recipe comes from my
Mother. It is the best I've ever tasted!

Red Cabbage Salad
This recipe is also from my Mother and is
so easy to mix up and gets better tasting the
longer it sits and marinades. I make it
often at my house. It is refreshingly
different than cold slaw or other salads and
goes well with any meat dish especially fish.

Potato Pancakes
My Mother used to make 2 huge stacks of
these pancakes. One for my Father and
the other stack for the rest of us! My
Father had a large appetite and loved to eat
these pancakes with a little deviled ham on
them. He could easily eat twelve the
size of a dinner plate! My Mother served
them with home made apple sauce and called it
"Himmel und Erde", which means,
"Heaven and Earth". Heaven
being the apple sauce and earth the potatoes.

Potato Bake
Here is a hearty potato dish that goes well
with almost any meal. I like it with
fried chicken, ham chops, pork chops or
steaks. It is simply very delicious!

style Cucumber Salad
This recipe comes from my mother and is
very refreshing when it is served cold and
crisp right out of your refrigerator. It
is a great summertime salad, especially when
you have home garden-grown cucumbers.

Fried Zucchini
This recipe comes from my father. He
taught mom how to make it for him. He
loved zucchini fried real crispy in oil.
It was one of his favorites. Give it a
try. It's certainly different!
Broccoli
Salad (version #2)
This recipe comes from my good friend
Darleen Jack. She makes it a lot for
church socials and everyone loves it, and so,
I just had to have the recipe. My
husband, Phil is quite fond of it and insisted
that we make it for our Christmas family
reunion this past year, 2005. It was a
big success! It is really very easy, so
give it a try.
Funeral
Beans
Now what exactly are funeral beans, you
might ask. This recipe comes from Agnes
who got it from some women at a church where
she was attending a funeral. We just
didn't know what else to call them so we call
them funeral beans. This is a tasty way
to fix up green beans in a very different way.
They have a sweet and sour and bacon taste
that can't be beat. I fell in love with
them at first bite! Give them a try and
you won't be sorry.
Baked
Tomatoes
This is a recipe that was given to me by
the Chef at Pipestem Restaurant and Resort in
West Virginia near my Daddy's home town of
Hinton where we had a family reunion this
year, 2007. Such a simple recipe but oh
so good. These tomatoes were such a big
hit. The Chef served them with a platter
of seasoned and brushed with olive oil,
grilled wedges of zucchini, carrots, and sweet
potatoes and surrounded the platter with the
baked tomatoes. It was a beautiful
presentation and quite delicious. Give
them a try.
