Cocoanut Macaroons
Ingredients:
- 1/2 cup sweetened condensed milk
- 2 cups shredded cocoanut
- 1 tsp. vanilla
- 1 tbsp. grated lemon rind
- 1/2 lemon
- 2 egg whites
- pinch of salt
Pour milk into a bowl and add cocoanut and stir with a spatula,
(do not use electric mixer). Add vanilla and lemon rind.
Rub a stainless steel bowl with the cut side of the
lemon. Add 2 egg whites and beat with electric mixer till
they froth then add salt and continue to beat until stiff peaks
form.
Fold egg white into cocoanut mixture and drop by teaspoonfuls
onto a butter cookie sheet or parchment paper and bake at 350
degrees for about 15 min.
So simple yet so delicious!
