Peanut Brittle

                                        

  • 2 Cups of Sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1/4 cup butter
  • 2, 1/2 cups of raw peanuts or unsalted roasted peanuts
  • 1 and 1/2 tsp. baking soda, sifted

Butter 2 large baking sheets and then set them aside.  Butter the sides of a heavy 3 quart sauce pan.  In the sauce pan combine sugar, corn syrup, water and butter and cook over med. heat till boiling stirring constantly, but avoid splashing mixture on sides of sauce pan.  This should take about 5 min.  Carefully clip a candy thermometer to the side of the pan.  cook until thermometer registers 275 degrees.  This should take from 30 to 35 min.  

Stir in peanuts and continue cooking till it registers 295 degrees, another 15 to 20 min. more.  

Remove pan from heat and quickly add soda and stir and immediately pour over the baking sheets.  If desire you can pull candy gently with a fork to stretch it some more but avoid tearing the candy.  Cool completely and break into pieces.  Makes about 2 and 1/3 lbs. of candy.
