Basic Yellow Layer Cake

You will need:

  • 2/3 cup butter softened
  • 1 3/4 cups sugar
  • 2 extra large eggs
  • 1 and 1/2 tsp. of vanilla
  • 3 cups sifted cake flour
  • 2 and 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 and 1/4 cups milk

In a mixing bowl or mixer cream butter and sugar gradually till light.  Add eggs and vanilla and beat till fluffy.  Sift flour, baking powder, and salt together and add to batter alternately with milk, beating after each addition.  Bake in 2 greased and floured 9 inch baking pans at 350 degrees for about 30 to 35 min., remove and cool. 10 min.  Remove from pans and allow to cool completely before frosting.

For Yellow cake Deluxe:

Prepare yellow cake as directed above.  After completely cooled, fill with lemon filling and frost with seven min. frosting or ( boiled icing) and sprinkle with cocoanut.

Lemon filling:

Combine 3/4 cup sugar, 2 tbsp. cornstarch, and a dash of salt in a saucepan.  Add 3/4 cup water 2 slightly beaten egg yolks and 3 tbsp. lemon juice.  Cook till thickened add 1 tbsp. butter and stir then cool and spread in between cake layers.

Seven Minute Frosting:

Place 2 egg whites, 1/8 tsp. salt, 1 and 1/2 cups sugar, and 1/2 cup water in the top of a double boiler and add 1 tbsp. light corn syrup.  Cook and beat with electric mixer for seven min. or until frosting holds its shape when dropped from the beater.  Transfer to a bowl and add 1 and 1/2 tsp. vanilla extract and continue beating until thick enough to spread on cake.
