Beef Burgundy

Ingredients:

  • 2 lbs. of round steak, 1/4 of an inch thick
  • 3 tbsp. flour
  • 3 tbsp. butter
  • 1/3 cup chopped onion
  • 1 tbsp. chopped parsley
  • 1 clove of garlic, crushed
  • 1 medium bay leaf
  • 3/4 tsp. salt
  • dash of pepper
  • 1, 6 oz. can of whole mushrooms, drained
  • 3/4 cup of red Burgundy wine
  • 3/4 cup of water
  • Cooked egg noodles or rice

Cut round steak into bite size cubes and shake in a plastic bag with the flour to coat evenly and being sure all the flour is used.  Melt butter and brown the steak cubes on all sides and then remove skillet from heat.  Add onion, parsley, garlic, bay leaf, and seasonings to the meat.  Stir in mushrooms, Burgundy and water.  

Bring mixture to boiling then reduce to simmer, covered, till meat is tender, about 1 hour.  You may have to add a little more water while it cooks.  Remove Bay leaf.  Serve over hot buttered egg noodles or fluffy rice.  Serves 6 people.
