Caramel Pecan Bread Pudding

You will need:

  • 1 Package (15 oz.) egg bagels (6 bagels)
  • 3 cups milk
  • 1/4 cup packed brown sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1/2 cup coarsely chopped pecans
  • 1/2 butterscotch caramel ice cream topping
  • Additional topping is optional 

Cut bagels with a serrated knife to make 1 inch pieces enough to make 8 cups.  Place in a baking pan and bake for 15 to 20 min. or until they are lightly toasted.  Cool slightly and transfer to a casserole dish.  

Combine milk, brown sugar, eggs, vanilla and cinnamon and whisk together and pour over the bread.  Let stand 15 min. and then mix well.

Sprinkle pecans over the mixture and then drizzle the ice cream topping over the mixture and bake for 45 to 50 min. on 325 degrees or until knife inserted comes out clean.  Cool 10 min.  

To serve place a helping of the pudding in a dessert dish and add some more ice cream topping if desired and a scoop of vanilla ice cream or whipped topping sprinkled with cinnamon.
