Raspberry Delight

Ingredients for the first layer:

  • 2 and 1/4 cups flour
  • 2 tbsp. sugar
  • 3/4 cup butter softened

Filling:

  • 1, 8oz. package of cream cheese softened
  • 1 cup 10X sugar
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 2 cups whipped topping (I use Cool Whip)

Topping:

  • 1 package (6oz.) of Jello raspberry gelatin plus 2 tbsp.
  • 2 cups boiling water
  • 3, 10 oz. packages of frozen raspberries
  • additional whipped topping and mint leaves

In a bowl combine the ingredients for the first layer and press into an ungreased 13 X9 inch pan or casserole dish.  Bake at 300 degrees for about 20 to 25 min. (crust will not be brown)  Remove from oven and cool.  

In a mixing bowl beat the cream cheese, sugar, vanilla and salt till smooth then fold in the whipped topping. spread over cooled crust. 

Dissolve gelatin in boiling water .  Stir in the raspberries.  Chill for 20 min. or until the mixture begins to thicken and spoon over cheese mixture.  Refrigerate until it is set and cut into squares and serve with whipped topping and garnish with mint leaves and fresh raspberries.
