Leftover Skillet Supper

In a med. size pot on high heat , boil some new potatoes, or red in the skin till tender and drain and let cool slightly.  peel the potatoes and slice them into a large deep skillet in 1/2 stick of butter and 2 tbsp. olive oil, and salt to taste,  till almost golden brown and crispy.  Add 1 and 1/2 lbs. or so of your favorite sausage cut into bite size pieces (Mom always used Polish Kielbasa) and cook a while longer till potatoes and meat are done.

(My Mom used up leftover potatoes from the refrigerator or leftover ham and anything else she could use up so as not to waste food)

In another skillet melt 2 to 3 tbsp. margarine on med. heat and add 6 scrambled eggs and cook till done.  Remove from heat and add to potato and sausage mixture.  Serve with a salad and your favorite bread.  (Note: you can also add a vegetable to this mix such as frozen peas or carrots, but my Mom always served it plain)
