Pumpkin Cheese Roll

You will need:

  • 3 eggs
  • 2/3 cup of pumpkin
  • 1 tsp. lemon juice3/4 cup flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt

Mix together to make the batter.  Spread on a greased and floured 10X15 inch Jelly roll pan.  and bake for 15 min. or so on 375 degrees.  Turn out on a linen cloth sprinkled with powder sugar and let cool. (Note: be careful not to over bake or cake will become brittle and crack)

Filling:

  • 1 cup 10X sugar
  • 6 oz. of cream cheese, softened
  • 4 tbsp. butter, softened
  • 1/2 tsp. vanilla

Beat and then spread over the cake and roll up cake gently, seem side down.  Sprinkle with some more powdered sugar.
