Pumpkin Cheese Roll
You will need:
- 3 eggs
- 2/3 cup of pumpkin
- 1 tsp. lemon juice3/4 cup flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
Mix together to make the batter. Spread on a greased and
floured 10X15 inch Jelly roll pan. and bake for 15 min. or
so on 375 degrees. Turn out on a linen cloth sprinkled with
powder sugar and let cool. (Note: be careful not to over bake or
cake will become brittle and crack)
Filling:
- 1 cup 10X sugar
- 6 oz. of cream cheese, softened
- 4 tbsp. butter, softened
- 1/2 tsp. vanilla
Beat and then spread over the cake and roll up cake gently,
seem side down. Sprinkle with some more powdered sugar.
