Quick Caramel Pecan Rolls

Ingredients:

  • 1/4 cup packed brown sugar
  • 2 tsp. flour
  • 2 tbsp. butter
  • 2 tsp. milk
  • 1/2 tsp. rum extract
  • 1 package (8) refrigerated crescent rolls
  • 1 tbsp. butter, melted
  • 1/4 cup brown sugar, packed
  • 2 tbsp. chopped pecans

In a small sauce pan combine 1/4 cup brown sugar and flour then stir i 2 tbsp. butter and milk.  Cook over med. heat till thickened and bubbly.  Remove from heat and stir in rum extract.  Divide the mixture evenly in 8 muffin cups and set aside.

Unroll the refrigerator rolls into triangles and brush with melted butter.  Combine the nuts with 1/4 cup brown sugar and sprinkle on top of the triangles.  Roll up the triangles and cut cross wise in half and place both halves cut side down into one muffin cup and repeat for for the other cups.  

Bake in a 375 degree oven for about 15 min.  Invert onto wire rack or plate and serve warm.
