Macaroni and Cheese Florentine

Ingredients:

  • 1 and 1/2 cups of milk
  • 1/2 cup water
  • 1 package of Knorr Cream of Spinach Soup mix
  • 2 cups shredded cheddar cheese
  • 1/2 tsp. prepared mustard
  • 8 oz. of elbow macaroni cooked in salted water to al dente stage
  • 1/4 cup dry bread crumbs
  • cooking spray
  • optional: 2 cups cooked and chopped into 1/2 inch squares of ham

In a 2 quart sauce pan combine milk, water and soup mix.  Bring to boil and cook for 3 min. on med. high heat.  Remove from heat.

Stir in cheese and mustard until smooth.  Now, add ham and macaroni.  Turn into a 2 to 3 quart baking dish sprayed with cooking spray.  Sprinkle with bread crumbs and bake at 375 degrees for about 25 min. or until lightly browned.

When I put in the ham I like to change the pasta to a wide egg noodle because it suits the meat better.

Delicious and fast and serves about 6 people.
