Fast Family Chicken Fajitas

Ingredients:

  • about 1 lb. of chicken breast meat cut up in strips ( 4 half breasts )
  •  2 tsp, vegetable oil, divided
  • 1 clove of garlic pressed or chopped finely
  • 1 envelope of Lipton's onion soup mix
  • 1/2 cup water
  • 1 med. green and 1 med. red bell pepper cut into skinny strips
  • 1/2 cup salsa 
  • 12, 7 to 8 inch flour tortillas, warmed in the oven

In a large cast iron or stir fry skillet, heat 1 tsp. of oil and the chicken until it turns white in color over med. high heat.  Remove from skillet and set aside.  Next fry the pepper sticks and the garlic till they are crisp and tender in the remaining oil.  Add soup mix, salsa, water and chicken and cook for 2 to 3 min. more.

To serve place chicken mixture in the center of oven warmed tortillas and serve with toppings if desired of more salsa and 4 cheese Mexican shredded cheese.  I like to serve my fajitas with a side dish of refried beans with melted cheese on top (I get mine from the can) and Spanish rice (From the box) with mine.  Or, make a salad of iceberg lettuce and tomato wedges and a bag of nacho cheese Doritos slightly crushed add a little of that Mexican shredded cheese and add Kraft Catalina Dressing.

A great Mexican meal in less than 1/2 an hour!  Delicious!
