German Potato Pancakes

Peel and rice about 5 lbs. of potatoes with an electric food processor and a blade for ricing or with a had ricer into a large bowl.  My Mother always use plain old white potatoes for this recipe.  Try to get out as much of the starchy water that comes to the top by pressing a spoon gently on the top of the potatoes and discarding the water into the sink.  

Next add about 4 eggs to the potatoes and about 1/2 cup flour or so and salt to taste to the potatoes.  Some folks like to rice a little onion in as well but my Mother always made them plain.

Heat a rod iron skillet with a little vegetable oil in it to very hot.  Gently ladle the potato mixture into the skillet and spread out but not too thin about 1/8 to 1/4 inch thick and fry till golden brown then turn over gently and fry on the other side as well.  Remove to a platter and repeat process till all the potato mixture has been used.  You will have to add more vegetable oil as you keep frying from time to time. ( I place my fried potato pancakes on paper towels to get out some of the extra oil and then on a platter.)

Serve with apple sauce or favorite canned fruit.  My husband likes smoked pork chops with his.  

Wonderful potato side dish as well!
