Best Carrot Cake

                               

Ingredients:

  • 3 Cups sifted flour
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 and 1/2 cups raisins
  • 3/4 cups coarsely chopped walnuts
  • 2 cups sugar
  • 1 and 1/4 cups corn oil
  • 1 tsp. vanilla
  • 3 cups finely grated carrots
  • 4 large eggs

Sift together in a large bowl flour, baking powder, baking soda, salt and cinnamon.  

In another small bowl mix together raisins and nuts adding 2 tbsp. of flour mixture  to coat the nuts and raisins.

Combine all ingredients into large mixing bowl and add eggs one at a time mixing after each addition and mix well.  Pour into greased and floured tube pan and bake at 350 degrees until tooth pick inserted comes out clean or golden brown.

Icing:

  • 1 stick of butter
  • 1, 8oz. package of cream cheese softened
  • 1 box 10 X sugar (powdered sugar)
  • 2 tsp. vanilla
  • 1/2 cup chopped walnuts

Cream together the above ingredients and frost cake when cool and sprinkle with nuts.

Very delicious!
