Old Fashioned Fruit Cobbler
This recipe makes a 9 inch square baking dish of cobbler.
I usually double it for the large casserole dish.
First melt 1/2 stick of butter in the baking dish. Then
mix in a med. bowl:
- 1 cup of flour
- 1 cup sugar
- 2 and 1/2 tsp. baking powder
- 3/4 cup milk
Pour batter over melted butter then drop fruit by spoonfuls(
about 2and 1/2 cups) on top of the batter. The fruit will
sink to the bottom when baking. Bake at 375 degrees until it
is firm to the touch and golden brown.
If you would like to try fresh sour cherries in yours here is
what I do. Pit the cherries. In a sauce pan place
about 3 cups of cherries with 1/2 cup water and 1/3 cup of sugar
and 2 pats of butter and2 heaping tbsp. corn starch and heat till boiling, then reduce.
Drop by tablespoonfuls into
the batter and bake.
For peach, I use about 4 to 5 small peaches. Boil them
whole for a min. or two to loosen the skin then put in cold water
and then peel and slice and add to a sauce pan with 1/4 tsp.
cinnamon and 1/4 cup milk, 2 tbsp. corn starch and 1/3 cup of sugar and 2 pats of
butter, and 1 capful of reconstituted lemon juice and bring to a boil and reduce.
Peaches will thicken. Using a fork place into the batter and bake.
