Lemon Meringue Pie
Follow recipe #34 for crust.
In a medium sauce pan add:
- 6 tbsp. corn starch
- 2, 1/2 cups water
- 1 cup sugar
- 1/4 tsp. salt
- 5 egg yolks, slightly beaten
- 2 tbsp. butter
- 5 tbsp. lemon juice
- 2 tsp. of lemon rind, ( I do not use the rind in my pie)
- 1, 9 inch baked pie shell
Mix cornstarch with 1/2 cup cold water in the top of a double
boiler, blend in sugar and salt. Add remainder of water stirring constantly
until boiling for 10 min. or so then gradually pour hot mixture over beaten egg yolks stirring
constantly and return to double boiler for another 2 min.
remove from heat and add butter, lemon juice and rind. still
stirring.
Pour into pie shell.
Beat egg whites and add 1 tsp. cream of tartar and add 1/3 cup
of powdered sugar or 6 tbsp. of regular sugar until stiff peaks form
and add to pie and bake at 325 degrees for about 15
min. or until peaks are golden brown. Turn off oven and let
pie cool down in the oven. Then remove and serve.
