Jewish Apple Cake

In a large bowl combine:                        

  • 3 cups flour
  • 2 ½ cups sugar
  • 4 eggs
  • 1 cup cooking oil
  • ½ tsp. Salt
  • 1/3 cup orange juice
  • 2 ½ tsp. Vanilla
  • 3 tsp. Baking powder,

In another large bowl:

  • 8 to 10 apples peeled, cored and sliced thickly about 1/8 size of the apple
    (Jonathan apples are best or try stamen, wine sap or granny smith)
  • 2 tsp. cinnamon
  • 3 tablespoons sugar and toss

Now, in a greased and floured tube pan, layer, starting with batter then apples (about 3 layers ending in apples)

Bake at 350 degrees for about 1 and 1/2 hours or until cake is done

Cool, slice and serve with a dollop of whipped cream.
