Pumpkin Pie
Use Crust recipe # 34 but do not bake. Fill pie with
pumpkin mixture:
- 2 extra large eggs
- 3/4 cup of milk
- 3/4 cup of evaporated milk
- 1 and 1/2 cups of pumpkin
- 1 tbsp. corn starch
- 1/3 cup lt. brown sugar packed
- 2 tbsp. sugar
- 1/2 tsp. cinnamon
- 1/8 tsp. all spice
- 1/8 tsp. ginger
- 1/4 tsp. salt
Combine all ingredients into large bowl and mix on med.
speed. When thoroughly combined, pour into shell and bake
and sprinkle powdered nut meg on top and bake in 350 degree oven
for about 35min. or more till it is done. The center of the pie
usually raises when it is done or is firm to the touch. Cool
and slice and serve with whipped cream with a slight sprinkle of
cinnamon.
Mild and creamy and Yummy!
