Pie Cookies
Just follow the directions for my pie dough recipe or if you
have left over pie dough because you were baking, here's how to
use it.
Roll it out into as much of a rectangle as possible.
Lightly brush with soft margarine Combine about 3 tbsp. of sugar
and 1 tsp. of cinnamon and sprinkle over the pie
crust. Finely chop about 1/3 of a cup of pecans and
sprinkle them over crust as well and gently but tightly roll up
into a log. Slice about 1/4 inch thick and place on
ungreased cookie sheet and bake at 400 degrees for about 8 min. or
until done. They freeze well and store well.
How easy is that? And, you didn't have to throw away the
extra dough!
