Special oatmeal Cookies
Ingredients:
- 3, 1/4 cups of flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup butter
- 3/4 cup sugar
- 3/4 cup lt. brown sugar
- 2 tsp. vanilla
- 2 eggs
- 1, 12 oz. bag of English toffee chips or brickle (I use
Heath brickle)
- 2, 1/2 cups Quaker Quick Oats
- optional additions are, 1 cup chopped pecans, 1 cup semi
sweet mini chocolate morsels or add all of these to the
mix. I tried it once and the flavor blew me away!!
Roll cookie dough into a log and cut 1/4 inch slices and place
on an ungreased cookie sheet and bake on 375 for about 13
min. Cookie should not be brown but golden. If you
bake them too long they get hard and loose their moistness.
Here is a trick I learned long ago from an excellent
baker. Keep the cookies in a container with an apple slice
or two and they will stay moist a long time.
