Funnel Cake

Ingredients are:

  • 4 cups of white flour
  • 1 tbsp. of baking powder
  • 1/2 tsp. salt
  • 1 cup light brown sugar
  • 3 eggs
  • 2 and 1/4 cups milk
  • 1/2 tsp. vanilla

I use a small cast iron skillet and fill it about half way up with cooking oil.  Heat on high and make sure it is hot enough before placing dough into the oil.  

Then I use my 1 cup measuring cup and fill about 1/2 with the dough and pour into hot oil slowly and in crazy patterns to make one funny looking circle of lumps. Fry till golden brown, then flip it over gently and do the other side.  I use a flat wire whisk and a fork to turn them over and remove them.  They only take a few min. to cook, and then put on paper towel to drain and sift with powder sugar(10X).  Or try a little cinnamon with the 10 X sugar for a different taste.

Josh loves to put cherry and blueberry pie filling on his.  For just 3 or 4 friends I cut the recipe in half.  I serve them on paper plates and that makes things easy to clean up!
