German Butter Cake
preheat oven to 350 degrees
In mixing bowl, combine 1 stick (1/2 cup) of softened unsalted
butter and 1 stick of softened lightly salted butter and whip with
electric mixer.
Add:
- 1cup sugar and beat again
- 4 large eggs, one at a time
- beating after each egg
- 1 tsp. baking powder
- 1 and 1/4 cups flour, (batter will be thick)
Then:
- carefully fold in one 14.5 oz. can red tart pitted pie cherries
packed in water, drained
- pour into a 13”x 9” ungreased sheet cake pan or glass
casserole dish
- bake, till lightly brown on top about 30 min.
- cool and sprinkle with 10x sugar and cut into squares
For a variation, try using 1 can (11oz.) of mandarin oranges,
fresh blueberries work well also
