Salad Sandwiches

Tuna Salad:

I use Albacore tuna either the chunk light kind packed in water or the solid white in water.  Drain the tune well and flake it with a fork in a bowl.  I chop celery hearts real fine and also a small amount of dill pickle as much as you like.  I add Hellmann's mayonnaise and about 1 tbsp. of French's yellow mustard.  That's all, nothing more.  A very simple recipe.

Egg Salad:

Boil about a dozen eggs.  Peel and chop the eggs into a bowl and add Hellmann's mayonnaise and a tsp. of French's yellow mustard.  Sometimes I add about 2 tsp. of sweet pickle relish to spice it up a bit.  That's it also very simple.

Chicken Salad:

In a large sauce pan, boil about 6 split chicken breasts with the bone along with 2 bullion cubes of Knorr chicken bullion and with 1 med sweet onion cut into quarters, 3 large stalks of celery cut into pieces, 3 large carrots cut into pieces and 3 or 4 cloves of garlic chopped.  Turn down the heat to simmer until chicken is tender then remove the chicken and allow it to cool.  Save the chicken stock for other recipes by freezing or use it to make chicken noodle soup or dumplings.  

Now, remove the chicken from the bone and cut it up into bite size pieces and place in a large bowl.  Add Hellmann's mayonnaise and finely chopped celery and that is all there is to it.

On occasions I will vary this recipe slightly by using red delicious apples chopped and green seedless grapes instead of celery.
