Southern Fried Chicken

Just wash the chicken pieces and salt lightly.  In a large deep plate add one box of Nabisco Cracker Meal.  In another large deep plate scramble about 4 eggs.

Heat enough Crisco (White) shortening to come to half way up in a cast iron skillet.  These days I use safflower oil instead for health reasons but Mom always used Crisco.

Dip each piece of chicken into the egg mixture then into the cracker meal and coat the chicken well.  Place into the hot oil or grease and cook till golden brown on one side then gently turn over to cook the other side.  Drain off excess grease on the chicken on paper towels.  Do not use a lid to cover chicken while cooking for this will not allow the chicken to be crunchy.  Simply delicious!
