Fried Oysters
All you need is the oysters, some flour, scrambled egg and
yellow cornmeal and cracker meal.
I just mix 1 cup cracker meal and 1/3 cup cornmeal together and
set aside on a deep plate. Put
1 cup of flour on another deep plate.
Also, scramble about 3 eggs in a deep plate.
Wash oysters and drain well.
Dip each oyster into the flour then the egg mixture then
the crumb mixture and deep fry in a large cast iron skillet or
fryer in safflower oil. Remove
when golden on both sides and serve with your favorite cocktail
sauce.
