Pineapple Crumble Pizza Pie

You will need: one recipe of pie crust #34 and follow directions for a one crust pie.  Roll out the dough and transfer to a pizza pan or a round baking stone.  Roll about 3/4 of an inch inward toward the center and crimp the edge.

filling:

  • 1 standard size can of crushed pineapple (about 16 oz.)
  • 2 to 3 tsp. of corn starch
  • 3/4 of a stick of lightly salted butter
  • 1 cup of regular flour
  • 2/3 cups of sugar
  • 1/2 tsp. of cinnamon

On the stove in a small saucepan add the first 2 ingredients and bring to a boil and remove promptly after the mixture thickens.  Spread the mixture evenly on the unbaked pie crust.  In a small bowl combine the other ingredients and cut the butter into the flour and sugar mixture to make the crumble topping.  I just use my fingers.   Sprinkle all the crumble mixture over the pie and bake for about 30 minutes on 350 degrees or until light golden brown.  You can serve this pie hot right out of the oven with a scoop of vanilla ice cream.  It is so delicious!
