Moms’ Award Winning Chili

You will need:

·        3 lbs. of ground chuck or use half, ground venison

·        1 & ½ large sweet onion chopped, Vidalia is best

·        1 to 2 tbs. Olive oil

·        3 cloves of garlic, minced

·        1, large can of crushed tomatoes

·        1, 6 oz. can tomato paste and 2 cans of water

·        6 tbs. chili powder

·        1 & ½ tsp. salt and 1 tsp. ground cumin

·        dash of pepper

·        1, 16oz. can light red kidney beans

·        1, 16oz. can of pinto beans

·        1, 16oz. can of great northern beans

·        ¼ cup sugar or honey

Brown meat with oil and onions and garlic in a large 4 quart sauce pan on medium high heat, then add all other ingredients except the beans and stir well.  Bring mixture to boil and then reduce to simmer for about a half an hour or until the desired consistency is reached.  Now add the beans and allow the chili to cook simmering for another 15 minutes or so.  You can add more chili powder or hot sauce and spices as you like to taste. 

You may serve the chili topped with shredded lettuce, shredded cheddar cheese, diced onions or tortilla chips.   

I like to serve mine with home-made corn bread and a side dish of white rice.
