Patty Cake's Italian Biscotti

In a mixing bowl, 

beat 6 eggs and 2 cups of sugar, add 2 sticks of softened butter.  Add 6 cups sifted flour, 6 tsp. baking powder, 1 tsp. salt, and mix well.  Now add 1 to 2 cups slivered almonds or other favorite nut chopped coarsely and 2 tsp. of flavored extract or combine flavors if you like.  Work dough into two balls.  Take one ball and roll into a 9 inch long stick and then pat down dough till about 2 inches thick and about 4 inches wide.  Bake at 325 degrees on a parchment lined cookie sheet for 30 minutes and cut into biscotti while still warm then turn cookie on it's edge and re-bake for another 10 to 15 minutes to make them good and hard.  Continue till all the dough is done.   

Now, melt one 12 oz. bag of dark chocolate morsels over low heat in a sauce pan and gently coat the bottom of the cooled biscotti with the chocolate and let harden on waxed paper.  

Be creative and try different combinations of flavorings and nuts or keep them very plain by using only vanilla or fruit flavorings and no nuts and the chocolate.  I have even tried using white chocolate and butterscotch flavored morsels.

Delicious and they keep so well and also make a lovely gift at Christmas time or anytime!
