Zwetschgenmus
 
Pit the plums and cook in a large saucepan until they become mushy.  Next you will add a small jar of Hienk, which is sugar beet syrup. Molasses works well also.  Midway through the cooking process you must put the plums in a blender to refine the mush completely and return to the pot .  Now you will add spices and table sugar to taste.  Start with 1/2 tsp. Cinnamon then a dash of ground clove a dash of nutmeg and a dash of all spice.  Taste the mixture and add more of the spices and sugar as you like them to taste.  Place in clean canning jars while hot, add lids and turn upside down till they are cool.  Store them and you will have zwetschgenmus for the winter.
