Broccoli Cheddar Chicken
You will need:
- 1 lb. of thinly sliced boneless skinless chicken breasts
- 1 package of frozen broccoli florets
- 1/2 stick of butter sliced into pats
- 1 cup shredded Colby cheddar cheese
- 2 sleeves of Ritz crackers
- about 6 oz. or so of Velveeta cheese melted
- cooking spray
Cover a 13x9 inch baking dish with cooking spray and add chicken
slices. Top with broccoli, then Colby cheese, Ritz crackers,
and finally the pats of butter on top. Bake at 350 degrees for
about 1 hour and 15 minutes or until chicken is tender. Remove
from oven and drizzel the melted Velveeta cheese on the top.
Serve hot with favorite side salad and a helping of
applesauce. Serves 4 to 5 people.
