Crispy Fried Zucchini
Slice a large zucchini in 1/8 to 1/4 inch size pieces or into strips about
5 " long. Dip the zucchini fist into flour and then
into scrambled egg and then into cracker meal crumbs. Salt
lightly. Place into a hot cast iron skillet into a
half of an inch of vegetable oil and fry till golden on each side and drain
well on paper towels and serve.
