Sour Cream Apple Tatin
First pour 1 cup of sugar and 1/3 cup water into a saucepan to
boil until the temperature of 360 degrees has been reached.
The appearance should be brown and caramel in consistency and
color. Peel and core and slice about 3 Granny Smith apples
into 12 sections and arrange on the bottom of a 9 inch buttered
pie pan and pour the caramel over the apples
In a mixing bowl or mixer combine:
- 6 tbsp. softened unsalted butter
- 3/4 cup sugar
- 2 extra large room temperature eggs
- 1/2 cup sour cream
- 1 tsp. lemon zest
- 1 tsp. vanilla
Blend until smooth and then add following dry ingredients:
- 1 cup plus 2 tbsp. sifted white flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
Spread batter over the apples and caramel and bake at 350
degrees for about 30 to 40 min. or until done. Invert on to
a plate and allow to cool slightly and sprinkle with 10X
sugar. Delicious!
