Mini Puff Pastry Turnovers

  • I package of Pepperidge Farm Puff Pastry Sheets
  • 1 can of your favorite blueberry pie filling
  • 1 cup 10X sugar
  • lemon juice

Defrost pastry sheets according to directions on the box.  Cut each sheet lengthwise into thirds and then crosswise into thirds again.  You will now have 9 squares on each sheet totaling 18 squares.  Take one square in your hand and scoop up a tsp. of blueberry pie filling into the center and then carefully fold into a triangle pinching the corners to seal them.  Don't worry about a little of the blueberry mix oozing out of the edges, cause it will help seal the turnover.  Continue till all are done.

Place turnovers on a cookie sheet covered with parchment.  Bake at 375 degrees till golden in color and nicely puffed up.  Cool for about 15 min.  In a small bowl mix the 10X sugar with a small amount of lemon juice (start with a cap at a time) until you have a glaze consistency.  Now drizzle the glaze over the turnovers and let cool completely.

Note:  Try using cherry pie filling instead of blueberry or Lemon pie filling or apple pie filling even peach pie filling works well.  I have also used chocolate pudding and topped them with a chocolate glaze.  It just doesn't get any easier than this!
