Diet Cherry Jell-O Cake

  • 1 box cake mix, I use Pillsbury white cake or yellow
  • 1 small box instant sugar free vanilla flavored jell-o pudding
  • 1 med. size container of Light Cool Whip
  • 1 small pack of sugar free cherry jell-o
  • 1 cup of milk
  • 1 can of Light cherry pie filling

Make cake according to directions on the box and pour into a 13x9 inch baking pan and bake at 350 degrees until done.  Cool cake completely.  With a large roasting fork punch holes in the cake and pour into the holes the cherry jell-o dissolved into one and 1/2 cups boiling hot water.  Use all the jell-o.  Allow the cake time to cool in the refrigerator.  In a mixing bowl, pour 1 cup of milk and the package of pudding mix and whip till smooth and thickened.  Add cool whip and stir until well blended.  Spread on top of cake.  Now add the can of cherries to the top of the cake.  cut and serve.

Note:  If you are not watching calories or sugar intake then use the regular jell-o pudding mix or the cheese cake flavored pudding mix and the regular cherry jell-o and the extra creamy cool whip.  It will taste even more rich.
