Herbed Seafood Packets
- 1/2 lb. bay scallops
- 1/2 orange roughy fillets, cut into 1 inch pieces
- 1/2 lb. uncooked large shrimp peeled and deveined
- 2 tbsp. chopped fresh or 2 tsp. of dried marjoram leaves
- 1/2 tsp. grated lemon peel
- 1/8 tsp. white pepper
- 3 tbsp. butter melted
- 2 tbsp. lemon juice
- 1 and 1/3 cups uncooked orzo or rosamarina pasta
Heat grill and cut 4, 18 inch squares of heavy duty foil and
spray with cooking spray.
Arrange scallops, fish, and shrimp on the foil, placing the
shrimp on top. Sprinkle with marjoram , lemon, peel, and
white pepper. Drizzle with butter and lemon juice.
Bring corners of foil up to center and seal loosely.
Place foil packet on the grill cover and grill over med. heat 8
to 10 min. or until the scallops are white , fish flakes and
shrimp are pink and firm. Meanwhile cook and drain pasta as
directed on package and toss lightly with a pat of butter and
sprinkle some parmesan cheese. Serve seafood over the
pasta. Serves four.
