Irish Potato Bake

  • 4 cups Corn Chex cereal crushed into 2 cups
  • 4 tbsp. butter, melted
  • 3 cups of seasoned stiff hot mashed potatoes
  • 1/2 cup sour cream
  • 1/2 tsp. onion powder
  • 1/4 tsp. seasoned salt
  • dash of white pepper
  • 1 package (10 oz.) frozen chopped broccoli cooked and drained, omit salt
  • 1 cup shredded process American cheese

Butter a 1 and 1/2 quart baking dish.  Combine Corn Chex crumbs with the butter and set aside.  Combine potatoes with sour cream, seasonings and broccoli stirring gently until well mixed.  Turn half of the mixture into the dish and sprinkle with half of the cheese and then with half of the crumbs.  Repeat.

Bake in a 350 degree oven for 20 to 25 min. or until crumbs are golden.  Serves eight.  Double this recipe for a large crowd or for parties and buffets.
