Salted Peanut Chews

Base:

  • 1 package of Pillsbury Yellow cake mix
  • 1/3 cup butter softened
  • 1 egg
  • 3 cups miniature marshmallows

Topping:

  • 2/3 cup corn syrup
  • 1/4 cup butter
  • 2 tsp. vanilla
  • 1, 10oz. package of peanut butter chips
  • 2 cups crisp rice cereal
  • 2 cups salted peanuts

Heat oven to 350 degrees and combine in a mixer on low speed or by hand the cake mix, butter and egg until crumbly.  Press into the bottom of a 13X9 inch baking pan or casserole dish and bake for 12 to 18 min, or light golden brown.  Remove from oven and immediately sprinkle with marshmallows and return to oven for an additional 2 min. or until marshmallows begin to puff.  Remove and cool.

In a medium sauce pan combine all topping ingredients except cereal and peanuts and heat just until chips are melted and mixture is smooth, stirring constantly.  Remove form heat and add nuts and cereal and immediately spoon over the marshmallows spreading to cover.  Refrigerate for 1 hour or until firm.  Cut into bars.  Delicious!
