Jager Schnitzel (Hunter Style)
Salt and pepper 3 or 4 tenderized veal cutlets. and dip into
flour and fry in a skillet with 1 tbsp. of butter and a little
olive oil until browned on both sides. Add 1/2 cup of finely
chopped leaks and 1/4 cup of finely chopped celery root and cook a
few min. more. Remove meat and add 1 knorr beef bullion cube
with a cup of water and 6 to 8 tbsp. of German dry white
wine. to deglaze the pan and 1/2 package of button
mushrooms.
You may have to thicken the gravy a little with a water and
cornstarch mixture. Return meat to the pan and let simmer
till mushrooms are tender. Add 2 to 3 tbsp. of sour cream
and stir.
Serve over or with buttered egg noodles or potato
dumplings. (Note: My Mother substituted beef for the
veal in this recipe because it was less expensive. I would
use nice 1/4 inch cuts of sirloin tip if I was using beef,
tenderized, of course.)
