Wiener Schnitzel 

You can use veal or for a less expensive alternative use pork.  You will need 6 nice cutlets that have been tenderized by the butcher.

Scramble about 3 to 4 eggs in a large flat bowl.  In another large flat bowl pour 1/2 of a box of Nabisco Cracker meal.  Gently salt the cutlets on both sides.  Dip into the egg mixture and then into the cracker meal on both sides till well coated and lay aside on plate till all are done.

In a large cast iron skillet pour about 1 inch of vegetable oil in the bottom and turn on the stove to high heat.  Add the meat one at a time turning only once till golden brown.  Remove to a paper toweled plate till all are done.  (You may have to turn skillet down a little after the first 2 or 3 because a cast iron skillet really holds the heat well.)

Serve with a wedge of fresh lemon to squeeze on the cutlet and with buttered egg noodles for that is the traditional way to serve it.
