Heavenly Rice

• 2 1/2 cups water
• 3/4 cup rice (Uncle Bens Converted)
• 8 ounces cream cheese, softened
• 1/4 cup sugar
• 1 1/2 tbsp. mayonnaise
• 1 16 oz. crushed pineapple drained very well
• 1 package of mini marshmallows 1 cup cocoanut flakes
• 1 package Dream whip
• 1 can mandarin oranges drained, 
• optional-1 small jar of maraschino cherries for decorating

Prepare rice (25 min.) and rinse well with cold water.  Mix together cream cheese, sugar and mayo until creamy.  Add rice.  Mix together pineapple, oranges, marshmallows and cocoanut and add to rice.  Prepare Dream whip to package directions and fold into the rice mixture.  Top with cherries if you wish.  I usually leave out the cherries because I am not fond of them.  Refrigerate.  Serves 12.
